AND OF COURSE BAKED LAMB - BECAUSE MANY FAMILIES COULD NOT AFFORD A REAL LAMB THEY WOULD BAKE A SWEET ONE. EASTER MONDAY WAS TAKEN UP WITH A MAIN MEAL FROM EGGS, AS THE EGG WAS A SYMBOL OF REBIRTH.
