Potatoes did well in the foothills becoming one of the mainstays of many of the local recipes. Apart from spuds the sweet treats also had the more ordinary apples. They will be gone before you fry the last one!





Ingredients:
• 1 kg of potatoes boiled in their skins
• 400 g of coarse flour
• 1 egg
• 5 apples
• icing sugar
• cinnamon
• oil
• salt

Method:
Peel and mash the potatoes when cold adding the flour, egg and salt to make a pliable dough. Form squares and fill these with grated apple that has had cinnamon and sugar added. Fold the squares over the filling and press the ends together. Fry the pasties in hot oil. Remove from the pan and sprinkle with cinnamon sugar.
